pumpkin pancakes with cinnamon honey butter

I am obsessed with fall.  My favorite holiday is Thanksgiving and I love the entire season leading up to it.  I love the colder temperatures that beg for evenings spent around the fireplace, bundling up in comfy sweaters, and when coffee shops start offering pumpkin pie spiced lattes.  That familiar blend of pumpkin and autumnal spices is so homey and warm.  Ever since my lovely and dear friend Maggie mentioned that she had made pumpkin pancakes for breakfast last weekend, I have not been able to get the image of warm, fluffy pumpkin pancakes off my mind.  The recipe did not disappoint – the pancakes were light and warmly spiced with a medley of cinnamon, nutmeg, ginger and cloves.  A perfect way to begin a fall morning (even if I did crawl back into bed afterward for a post pancake nap).

Just to push these pancakes completely over the edge, I made a simple cinnamon honey butter by mixing a stick (1/2 c.) room temperature unsalted butter with 1/2 teaspoon of cinnamon and 1 tablespoon of honey.  Yum!
